I love making just plain chocolate ones and then putting like some Maltesers or M&Ms or bits of all kinds of candy bars in the middle!

Lol thanks for all the ideas! We ended up making raspberry and white chocolate, peanut butter muffins, coconut and raspberry jam muffins and toffee muffins!

That is why I don't make muffins very often, they are way too easy to eat. If I do make muffins I'll make something vaguely healthy, like banana/blueberry bran because I have the worst self-discipline in regards to yummy things ever.

Ha, They are pretty scrummy, we made 48 muffins all together so theres pleanty left.

Here's one of my favorites. We have these coffee shops in my area called "Dunkin Donuts" who were known for these.
Bet you can't eat just one.
CRANBERRY ORANGE Muffins
1 1/2 Cake Flour
1 tsp baking soda
2 tsp baking powder
1 pinch salt
1/2 tsp vanilla extract
1 Cup white sugar
1 Cup sour cream
1 egg
1/2 Cup veggie oil
2 Tbs Orange zest
1/2 dried cranberries
1/2 Cup fresh Orange Juice
Heat oven to 375. Grease 12 cup Muffin Tin or use paper liners.
In small sauce pan over medium heat, combine cranberries and Orange Juice.
Bring to simmer and remove from heat. Allow to soak berries for 15 minutes.
Drain them and lightly squeeze to remove excess juice and blot in a paper towel to dry.
In a large bowl wisk together the vegetable oil, egg, sour cream, vanilla extract, and sugar.
In another large bowl sift together the orange zest, flour, salt, baking powder, and baking soda.
Reserve 1 TB of dry ingredients and toss into the berries to coat them.
Pour the wet ingredients into the dry ones and stir with a spatula until they are just combined.
Don't over mix. The batter will be slightly lumpy. Fold in 2/3 of the berries into the batter and stir just a bit to combine.
Use an Ice Cream scoop to evenly divide the batter then sprinkle the remaining berries over the muffin tops. Bake 10 minutes.
Remove from oven. Sprinkle tops of the muffins with granulated white sugar and return the muffins to the oven to bake an additional
10 to 15 minutes, until the tops are golden and a toothpick inserted into a muffin center comes out clean.
Cool for 10 to 15 minutes in the pan before removing the muffins.
Note: I use the dried cranberries called "crazins". The warm Orange Juice reconstitutes them quite well and they store well too.
