What do you make that's healthy? (whatever your definition of the word is)

During this time of year I take advantage of all the fresh fruit and veggies available. Cucumber and tomato from our garden is a big staple side dish for my family and I. In the garden right now is a big assortment of vegetables, like beets, lettuce, snow peas, swiss chard, leeks, tomatos (lots of different types), corn, cucumber, peppers (lots of different types too). There is also herbs such as basil, cilantro, dill, parsley, thyme, tarragon, mint, and rosemary. Our fruits don't do that good, but we have blackberries, watermelon, honeydew and pumpkin. We have apple, pear, and cherry trees and blueberry bushes, but animals get to them, and the raspberry plants died. Our summer dishes are flavorful because of the big selection we have. (:

I like sprinkling cinnamon chipotle rub on tilapia and then cooking it. Steamed broccoli is one of my favorite things too. Oh! And spinach in drinks is awesome. Whenever I have some, and I make a protein shake, I'll add a handful of spinach in the blender as well. It doesn't add a taste at all, but turns it green and adds lots of nutrition. In autumn, I like baking a spaghetti squash and eating the spaghetti-like guts like real spaghetti, with a tomato sauce. Summer squash tastes really good baked/roasted, because all the sugars caramelize. yum.

I cook healthy stuff the majority of the time, however I'll occasionally make a dessert. But, I always try to 'lighten' it up/make it healthier. My favorite thing to do is replace all the oil with unsweetened applesauce. And if I can get anyway with it, I use whole wheat flour (it only works sometimes ... because whole wheat cookies aren't that fun. blah haha)

I don't have much time to post right now...but to sum it up, I try making things from scratch--no boxed mixes. And I use a minimal amount of oil in my food--as well as heavy cream and butter (I either find substitutes or throw in less than the recipe calls for). & Whenever I cook a full meal, I make sure there's a little bit of everything--meat, vegetables, and starch/carbs.

This sounds like us, except instead of meat in meals we use a protein... Beans, Tofu, Meat alternatives, etc...


We eat a lot of natural and organic foods, make lots from scratch, and always have the healthier version of things, like Whole Wheat bread w/o fructose corn syrup in it, or light versions of foods.

i made some kick ass fruit salad today (IMG:style_emoticons/default/smile.gif) . i put in some cantelope (sp), grapes, craisins, sliced almonds, some walnuts, blueberries, and apples (IMG:style_emoticons/default/smile.gif) . yummy!

I don't really cook healthy stuff, but I do eat the steamfresh veggies. I eat a lot of them actually. Scott hates veggies and even more hates frozen veggies, but I love them!

Aww lucky people with gardens full of home-grown veg!!! One day I will be one of you haha =)
Until then I try to buy organic, Austrian-grown, SEASONAL vegetables and fruit. I would never buy apples from Chile when it's apple season in Austria, because apples are one of the few things that this silly little country can produce enough of itself. I love bananas, pineapples and pretty much all fruit though, so I try to get all that at the organic grocery stores. I will spend more money on organic produce, the try and save money elsewhere.
So with all the nice organic, seasonal home-grown stuff I've bought I will go and make different tasty things. I try to cook something different everyday and include the right amounts of veg, meat, dairy etc. Sometimes it doesn't work out and we have ramen. But sometimes it does work out and I feel really good about myself =)
I think I learned a lot of that from my mom who would always feed us proper stuff when we were little. I really appreciate that now.
